Planning a large conference with a lot carbon footprint

We recently had the pleasure of catering for an impressive 400 delegates at a large conference in the iconic Assembly Rooms, Edinburgh. With our client’s commitment to sustainability aligning so closely with our own ethos, we seized every opportunity to ensure the event was as green as possible.

In such a stunning venue, little decoration is required, allowing the grand architecture to speak for itself. Our client used subtle yet impactful branding, with signage in their colours and lighting matched to reinforce their green message.

Guests were treated to a delicious breakfast featuring homemade breakfast muffins and Danish pastries from our talented patisserie team, alongside morning rolls with locally sourced specially selected sausages from Campbells Prime Meats (based in West Lothian), served in our bakery’s freshly baked bread rolls.

The conference layout was equally impressive, with an innovative “in-the-round” setup that made full use of the space and fostered a sense of inclusion. Lunch continued the sustainable theme, offering a selection of freshly prepared sandwiches with a variety of fillings, including satisfying plant-based options, and a warming, seasonal, chef’s special soup.

We were especially pleased that the client appreciated our use of electric vehicles to transport food, staff, and equipment to the venue, ensuring our carbon footprint was kept as low as possible.

To further reduce waste, we worked closely with the client on final numbers, adjusting guest estimates in the lead-up to the event. This planning enabled us to prepare precisely what was needed, minimising food waste.
